Curry Puff Pastry by @woon.heng ❤️

(Recipe makes 24 puff pastry)
Ingredients:⁣
~ 2 packs puff pastry of your choice (Start with 1 box first if unsure of the filling volume)⁣
~ 2 medium-large potatoes, cubed & soak in water to remove starch, drain well⁣
~ 3/4 cup frozen mixed carrots & peas⁣
~ 1 medium onion, 4 cloves garlic, 2 shallots, knob of ginger - all chopped⁣
~ 1.5 tablespoons red chili paste/sambal⁣
🍃Spices (adjust to your preference): 1/2 tablespoon cumin seed, 3 tablespoons coriander powder, 3 tablespoons curry powder (see story), 1 teaspoon turmeric powder⁣
~ veggie stock/water⁣
~ oil, salt to taste, melted vegan butter⁣, pandan leaves, tie to a knot (optional)⁣
⁣
1. In a heated non-stick pan, sauté onion until soft. Continue to cook with garlic, shallots & ginger until fragrant. Season with spices. Add in sambal, then potatoes & give it a stir. Place a knotted pandan leave, season with salt, used ~ 1 teaspoon. Add enough water to cover all the potatoes. Place lid over, turn to boil & let simmer until potatoes are fork-tender. Stir in frozen carrots & peas, remove pandan leaves & let cool. Taste test⁣.
2. Thaw puff pastry based on package instructions. Mine came with 2 sheets of 9X9. I cut each sheet to 6 pieces & roll to a square. Place 1-2 tablespoons of potato mixture and pleat to seal into a triangle.

3. Brush each puff with melted butter & bake until golden brown. I baked mine at 425F for about 20-25 minutes. Cooking time & oven temperature varies by brand.⁣

4. Serve warm with a cup of vegan 'teh tarik' - pull 'milk' tea.

Studying for my Gym Instructor and PT courses and I think I'll start to prepare for a bikini competition(maybe next year). CHICKEN WITH SMOKED PAPRIKA AND ALMONDS 🥘
Spanish cooking at its best! Lovely combo of almond and paprika! So easy to make and so tasty!
Ingredients:
Coconut oil
Red onion
Chopped garlic
Red pepper
Smoked paprika
Dried oregano
Chicken breast
Blanched almonds
Spinach
Salt and pepper
Juice of 1 lemon
Rocket and salad leaves
Melt the coconut oil on a frying pan, add the onion, garlic, red pepper and fry. Sprinkle in the smoked paprika and oregano and stir. Add the chicken until chicken is fully cooked. Week twelve...HOW?!?! just how has it been 12 weeks already!! I am incredibly happy and proud to have lost a total of 12.8kg and 49.5cm overall. As with anyone who has been on a weight loss journey I have really struggled with any form of “diet” but I finally found success with Keto. JRF just made it so incredibly easy for me and I am glad I have found something I am able to stick to. A couple of weeks ago my sister asked me when I was finished my challenge was I going to have one big binge day and then get straight back into keto, I couldn’t really answer her at the time so I just replied with I don’t know, maybe. Now that I’m here...I don’t want to. I have completed challenges before (none that have had anywhere near the results I have gotten from the jrf plan) and after I’ve finished I have gone straight back to doughnuts and takeout. Keto has changed that and I couldn’t be happier...that is the difference for me. So I want to say a massive THANK YOU to Josef and the JRF team 🙌🏼

I VERY rarely don’t feel like or enjoy working out, however, today is one of those days when I’m feeling tired after a full morning of clients, I have several more clients this evening with a late finish and am counting down the days until my holiday (3 more sleeps!). What to do?
Remind myself of the following:
1. You aren’t getting any younger
2. You need to take care of your body
3. Exercise boosts your self esteem
4. It gives you energy and motivation
5. Your health will improve
6. You’re in a bikini on the beach in 3 days time 👙
Yeah, it wasn’t fun but I’m the first one to tell people you should train even when you don’t feel like it because those are the best thing for mental training and self discipline!

On a more important note, I wanted to take a quick sec to talk about the power of 'health influencers' on our lifestyle choices. It is really a shame that these days, all you need to sound credible is 50k followers + a clickbait photo + a few flashy words. Since when did all of that replace a PhD? Quite frankly it is manipulative, reckless, and downright wrong. Yet it is happening everywhere.
I was once a victim to an influencer who's currently in the hot seat on Instagram. I found their account at a vulnerable time in my life: fresh outta the hospital for a bad flare and trying desperately with the best intentions to heal myself. So naturally I started to follow this person's advice religiously. I cut out so many things (things I actually loved) from my diet: kombucha, peanut butter, nutritional yeast, and various other foods with 'toxic' ingredients.
I wasted so much time and energy on what I should avoid, yet I never felt any better. Stress about eating unclean foods ➡️ elevated cortisol in the body ➡️ an even sicker, upset gut. All from worrying about something that's bogus in the first place.
So, this is my personal anecdote to help convince you not to take influencers' anecdotes as facts. Let's create a new kind of food freedom. Freedom to make our OWN choices based on our OWN bodies' responses to food. And to NEVER fully put our health in the hands of someone who is using it for fame and followers. Call out the b.s.!
